The Best Postpartum Snack for New Moms: Nourishing Carrot Almond Muffins - Plus Free Recipe Guide!
As a postpartum doula I have seen it time and time again—when moms are not replenishing themselves with nutrient-dense foods (including eating enough food!) and good hydration, our nervous system will quickly feel the effects. And when moms are chronically skipping meals—or only eating our children’s leftovers—our mental health, and then eventually, our physical health will also begin to feel the overall impacts of postpartum depletion, including brain fog, hormonal imbalance, digestive issues, long-term hair loss, and more.
Besides making sure my clients are feeling good, I also LOVE to cook. It is my love language of choice. And that is why as a postpartum doula I will take any chance to feed my clients healthy and delicious foods so they can feel their best. One postpartum snack I am often making for clients is my Carrot Almond Muffins. It goes perfect with my hand-blended Mineral Tea that I gift for all Sand and Sage clients.
Carrot Almond Muffins
These gluten-free muffins are high in protein and have a low glycemic index. And best of all, they freeze well and are a one-handed snack newborn mothers can easily grab and eat between changing diapers and doing all the other things that need to be done in the early postpartum days.
Dry Ingredients:
2 cups raw almonds, finely ground (2 1/2 cups ground)
1/4 cup ground flax seeds
1 teaspoon baking soda
1/2 teaspoon sea salt
1/2 cinnamon
Wet Ingredients:
2 cups grated carrots
1/4 cup melted coconut oil
1/4 honey or maple syrup
1/4 unsweetened applesauce
4 large eggs
Preheat oven to 350 degrees F. Line 12-cup muffin pan with paper inserts.
Use a Magic Bullet to finely grind almonds. Mix ground almonds with other dry ingredients. Add in wet ingredients and whisk together. Spoon batter into muffin pan.
Bake for about 30 minutes. Cool on a wire rack. Muffins may be frozen after completely cooled.
Makes 12 dozen muffins.
